Again another week of bento lunches. Again another 4 to show.

Monday: Cucumber, lettuce, carrot and avocado sushi ; raw carrot, broccoli, cauliflower ; grilled corn ; soy sauce container for the hubs

Tuesday: Rice ; sweet and sour stir fry w/ Corn, broccoli, carrot, zucchini, bean sprouts, capsicum.

This lunch was declared too big, and was lunch on Wednesday as well. I got half a container of rice back as ‘cutting the carbs’ is on the plan right now. So this lead to carb free rest of the week.

Thursday: Egg salad made w/ boiled eggs, pickles, avocado, thousand island dressing, cream cheese ; raw carrot, cucumber, celery, cauliflower, tomatoes, capsicum, spinach and lettuce from the garden ; grilled corn.

Friday: Stir fried corn, carrot, tofu, zucchini in a soy and honey.

Another week of bentos. Another 4 day week of bentos as Monday was the Hubs’ birthday and he had the day off. We went out for lunch and saw the Avengers. It was an awesome long weekend.

I made a batch of mini greek pies because silverbeet was fresh and on special where we buy our veges, so they feature heavily this week. I used puff pastry instead of short crust, and baked them in a cup cake tray.

On Monday I asked Mark if he wanted anything particular for his bento the next day and he said ‘split peas’. So this was the resulting bento

Tuesday: split peas cooked in tomatoes with spices and spinach ; raw broccoli ; rice dam wall ; lettuce from the garden, mung beans, cherry tomatoes, cucumber and shredded carrot.

Wednesday: Mini greek pies ; slaw made from cabbage, carrot and broccoli.

Thursday: mini greek pies ; pesto pasta salad with raw broccoli, tomatoes, peas and spinach.

Friday: ‘chicken’ fillet ; fried rice with fake ham, tofu and a crap tonne of vegetables.

I have started making lunches for my hubs and me. Yes I am currently at home full time, but when I am actually ready for lunch I am terrible at making it to eat. I really want something prepared, cold and ready to eat. The hubs needs a large amount of protein and nutrients to keep up with this body toning and I love to cook. So this gives me extra chances to cook, and have my lunch and his ready for the next day. I practically had to beg to get him to agree to it, as to him, making food to eat is super effort.

As I only started on Tuesday (for Wednesday) I only have three to show you this week.

Wednesday. 2 soft boiled eggs; raw broccoli, cauliflower and green beans; rice and lentils; sauteed spinach and mushrooms; potato salad. All made from scratch except for the potato salad dressing which was from a jar. Some extra fruit for Mark. Rockmelon and nashi pear. But we determined that it was too much for a single day of eatin’ so it was cut back to a single container per day.

Thursday. Potato salad in lettuce cup; raw carrots, green beans, broccoli, cauliflower, cherry tomatoes; lentils and rice in fake ham; sauteed mushrooms and spinach in lettuce cup; 2 boiled eggs.

Friday. Fried rice made w/ carrot, peas, corn, broccoli, cauliflower, zucchini, fake ham, tofu and rice from scratch; two individual bean sprout omelettes; raw cucumber, tomatoes and green beans.

So far it has been super tasty, not that much effort (takes about 30 mins each day so far). I will attempt to take pictures each day, and document it on the blog each Friday. The bentos are not really done in a flashy way with frills and pictures etc because we are both 30+ yrs old, so I doubt characters or coloured rice would really be appreciated let alone the hubs would be mocked by his workmates.  Happy lunching.
