I have started making lunches for my hubs and me. Yes I am currently at home full time, but when I am actually ready for lunch I am terrible at making it to eat. I really want something prepared, cold and ready to eat. The hubs needs a large amount of protein and nutrients to keep up with this body toning and I love to cook. So this gives me extra chances to cook, and have my lunch and his ready for the next day. I practically had to beg to get him to agree to it, as to him, making food to eat is super effort.
As I only started on Tuesday (for Wednesday) I only have three to show you this week.

Wednesday. 2 soft boiled eggs; raw broccoli, cauliflower and green beans; rice and lentils; sauteed spinach and mushrooms; potato salad. All made from scratch except for the potato salad dressing which was from a jar. Some extra fruit for Mark. Rockmelon and nashi pear. But we determined that it was too much for a single day of eatin’ so it was cut back to a single container per day.

Thursday. Potato salad in lettuce cup; raw carrots, green beans, broccoli, cauliflower, cherry tomatoes; lentils and rice in fake ham; sauteed mushrooms and spinach in lettuce cup; 2 boiled eggs.

Friday. Fried rice made w/ carrot, peas, corn, broccoli, cauliflower, zucchini, fake ham, tofu and rice from scratch; two individual bean sprout omelettes; raw cucumber, tomatoes and green beans.
So far it has been super tasty, not that much effort (takes about 30 mins each day so far). I will attempt to take pictures each day, and document it on the blog each Friday. The bentos are not really done in a flashy way with frills and pictures etc because we are both 30+ yrs old, so I doubt characters or coloured rice would really be appreciated let alone the hubs would be mocked by his workmates.
